Ingredients
  

For the Cheesecake Mixture

  • 8 oz Cream cheese Softened for easier mixing
  • 1 cup Greek yogurt Adds protein and depth of flavor
  • 1/4 cup Honey or agave syrup Natural sweeteners for lowering blood sugar spikes
  • 1 tsp Vanilla extract Enhances the overall flavor
  • 2 large Eggs Binds the ingredients and adds protein

For the Crust

  • 1 cup Almond flour Low-carb option for crust base
  • 2 tbsp Cocoa powder Optional for a chocolatey flavor

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a large mixing bowl, combine cream cheese and Greek yogurt until smooth.
  • Add honey/agave syrup and vanilla extract, mixing until fully incorporated.
  • In another bowl, combine almond flour and cocoa powder (if using).
  • Grease a mini muffin tin or line it with paper liners.

Cooking

  • In the prepared tin, press a small amount of the almond flour mixture into the bottom of each muffin cup.
  • Evenly distribute the cream cheese mixture over the crusts.
  • Bake in the preheated oven for 15-20 minutes, or until set; a slight jiggle in the center is okay.
  • Remove from the oven and let cool for 10 minutes before transferring to the refrigerator.

Serving

  • Chill for at least 2 hours before serving to allow the flavors to meld and the bites to firm up.
  • Carefully remove from the muffin tin and place on a serving platter.
  • Serve chilled; you can dust with a little extra cocoa powder if desired.

Notes

These cheesecake bites are meal-prep friendly and can be stored in an airtight container for up to 5 days in the fridge, or frozen for up to 2 months. Adjust the sweetness to your preference and consider using different flavor additions.
