Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
  • Grate the carrots finely using a box grater or food processor.
  • Melt the unsalted butter and let it cool slightly.
  • Gather the rest of your ingredients.

Cooking

  • In a large mixing bowl, combine the flour, baking soda, baking powder, salt, and spices.
  • In another bowl, mix the melted butter and sugar until well blended. Add the eggs and vanilla, whisking until smooth.
  • Pour the wet ingredients into the dry mixture, combining gently.
  • Fold in the grated carrots.
  • Pour the batter into your prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick comes out clean.

Serving

  • Once baked, let the loaf cool in the pan for about 10 minutes before transferring to a wire rack.
