For the Cream Cheese Layer

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking dish with parchment paper for easy removal.
  • In a mixing bowl, cream the unsalted butter and light brown sugar together until fluffy.
  • Add in the vanilla extract and egg, then mix until well combined.
  • In a separate bowl, mix the flour, baking powder, ground cinnamon, nutmeg, and kosher salt.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  • Fold in the freshly grated carrots for that perfect texture.

Cooking/Assembling

  • Pour half of the carrot cake batter into the prepared baking dish, spreading it evenly.
  • In a separate bowl, blend the cream cheese, granulated sugar, and egg yolk until smooth.
  • Spread the cream cheese mixture over the batter, then top with the remaining carrot cake batter.
  • Smooth the surface with a spatula.
  • Bake in the preheated oven for 30–35 minutes, or until a toothpick comes out clean.
  • Let cool completely in the dish on a wire rack.

Serving

  • Once cooled, lift the bars out using the parchment paper.
  • Slice into squares or rectangles, depending on your serving preference.
