Preparation

  • Gather all your ingredients. Wash and chop the carrots, celery, onion, and garlic.
  • Set your cutting board and knife aside so you can get cooking!

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and garlic; sauté until the onion is translucent, about 5 minutes.
  • Stir in the carrots and celery, cooking for another 5 minutes.
  • Pour in the vegetable broth, season with salt and pepper, and bring to a boil. Cover and simmer for about 15 minutes.

Serving

  • Once the veggies are tender, use an immersion blender to puree the soup until smooth.
