Preparation

  • Gather your ingredients to streamline cooking.
  • Thinly slice the white onions.
  • Peel and quarter the Yukon gold potatoes.
  • Prepare a pot of salted boiling water for the potatoes.

Cooking

  • In a large skillet over medium heat, add 3 tablespoons of olive oil.
  • Once hot, add the sliced onions and 2 teaspoons of sea salt. Cook for about 25-30 minutes, until deeply caramelized and golden brown.
  • While the onions are cooking, boil the quartered potatoes in salted water for about 15-20 minutes, or until fork-tender.
  • Drain the potatoes and return them to the pot. Let them steam for a minute to remove excess moisture.
  • Add in the caramelized onions, 3 tablespoons of unsalted butter, and 1 cup of blended cottage cheese.
  • Using a potato masher, mix until the potatoes reach a creamy consistency.
