  • Gather all your ingredients, ensuring everything is fresh and ready to use.
  • Peel and quarter the Yukon gold potatoes, placing them into a large pot of cold water.
  • Slice the onions thinly; this will help them caramelize evenly for a better flavor.

Cooking

  • Begin boiling the potatoes in the pot over medium-high heat. Cook until fork-tender, roughly 15-20 minutes.
  • While the potatoes cook, heat olive oil in a large skillet over medium heat, adding the sliced onions and 2 teaspoons of sea salt.
  • Stir occasionally, allowing the onions to caramelize slowly, about 15–20 minutes until golden brown.
  • Once cooked, drain the potatoes and return them to the pot.
  • Add unsalted butter and blended cottage cheese, then mash until creamy. Fold in the caramelized onions, combining thoroughly.

Serving

  • Transfer the mashed potatoes to a serving bowl. Taste and adjust seasoning with additional salt and ground black pepper if needed.
