Preparation

  • Sift together the flour, baking soda, baking powder, cinnamon, and salt in a bowl; set aside.
  • In another bowl, cream together the softened butter and sugar until light and fluffy.
  • Mix in the eggs and vanilla extract, then gradually incorporate the Instant Apple Cider Drink Mix.
  • Gradually add the dry mixture to the creamed mixture and mix until well combined.
  • Cover the dough and chill in the refrigerator for 1-2 hours.

Baking

  • Preheat the oven to 350°F (175°C) and line cookie sheets with parchment paper.
  • Roll the chilled dough into balls, insert a half caramel into the center, and roll the dough tightly around it.
  • Roll each ball in a mixture of sugar and pumpkin pie spice until evenly coated.
