Instructions
 

Preparation

  • Gather all your ingredients on a clean workspace.
  • Wash and dry the arugula leaves and tomato.
  • Slice the tomato into thick, round slices, about 1/2 inch thick.
  • Cut the fresh mozzarella into equally thick slices.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes if you’re using it.

Cooking/Assembling

  • Drizzle fruity olive oil on one side of each slice of bread.
  • Place one slice of bread oil-side down in the preheated air fryer or on a warm skillet.
  • Layer with half of the arugula leaves, followed by the fresh mozzarella slices, tomatoes, and fresh basil leaves.
  • Season with kosher salt and freshly ground black pepper to enhance flavors.
  • Top with the second piece of bread, oil-side up.
  • If using the air fryer, cook for about 7-10 minutes or until golden and crispy, flipping halfway through for even cooking. If using a skillet, grill on medium heat until both sides are nicely toasted and the cheese is melting.

Serving

  • Remove the sandwich from the heat and allow it to cool for a minute.
  • Slice the sandwich in half diagonally for presentation.
  • Drizzle with balsamic vinegar for the final touch before serving.
  • Arrange on a plate alongside chips or a salad for a complete meal.

Notes

For extra depth of flavor, try toasting your bread before assembling. Swap out arugula for spinach if you prefer a milder green. Keep fresh basil submerged in water to maintain its freshness. Use a panini press for perfectly grilled sandwiches. Assemble sandwiches in advance; just grill when ready to enjoy.
