  • 1.5 pounds red potatoes Thinly sliced
  • 1 small onion Thinly sliced
  • 1 teaspoon salt Adjust to taste
  • 1 teaspoon freshly ground black pepper Adjust to taste
  • 4 tablespoons butter Thinly sliced
  • 1 tablespoon chopped fresh rosemary Optional, for flavor
  • 1 cup shredded cheddar cheese For topping
  • 1/4 cup chopped fresh parsley For garnish

Preparation

  • Preheat your oven to 375°F (190°C).
  • Wash and thinly slice the red potatoes.
  • Slice the onion thinly and set aside.
  • Chop fresh rosemary and parsley.

Cooking

  • In a baking dish, layer half of the sliced potatoes evenly.
  • Sprinkle some salt, black pepper, and half of the onions on top of the first layer.
  • Add half of the butter in thin slices, followed by half of the cheddar cheese.
  • Layer the remaining potatoes, salt, pepper, onions, the rest of the butter, and cheese on top.
  • Cover the dish tightly with aluminum foil and bake for about 30 minutes.

Serving

  • After 30 minutes, remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbling.
  • Check the potatoes with a fork; they should be tender throughout.
  • Let rest for a few minutes and garnish with chopped parsley before serving.

Notes

For a crispier top, broil the final dish for a few minutes. Store leftovers in an airtight container for up to 4 days.
