  • 1 medium yellow onion Offers a sweet flavor when cooked.

  • 1 cup shredded cheddar cheese Melts into a creamy topping.

Instructions
 

Preparation

  • Place the thinly sliced yellow potatoes in a pot of cold salted water. Bring to a boil and boil for about 3 minutes until just tender. Drain and set aside.
  • Heat a large skillet over medium-high heat. Add 1 tablespoon of oil, then the diced chicken. Cook until browned, about 5 minutes, seasoning to taste.
  • Add the finely diced onion and red bell peppers to the skillet. Cook for 5 to 8 more minutes until softened. Remove chicken and vegetables to a plate.
  • Add the remaining oil to the skillet and cook the drained potatoes until browned and crispy, stirring occasionally.
  • Once done, add the chicken and vegetables back to the skillet, stirring to heat through and adjust seasoning as necessary.
  • Sprinkle the dish with cheddar cheese, cover to melt the cheese, and serve immediately.

Notes

For a spicier dish, increase the Cajun seasoning or add cayenne pepper. This dish can be prepped in advance and stored for easy reheating later. Allow flavors to meld by resting for a few minutes before serving.
