Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
  • Add the cold, cubed butter to the flour mixture and work it into the flour until crumbly with pea-sized pieces.
  • Pour in the buttermilk and gently mix until a dough forms, avoiding overmixing.

Cooking

  • Transfer the dough onto a lightly floured surface and press into a rectangle about 1-inch thick.
  • Fold the dough onto itself three times to create flaky layers.
  • Roll the dough out again to about 1-inch thickness.
  • Cut the dough with a biscuit cutter or glass, pressing straight down without twisting.
  • Place biscuits on a parchment-lined baking sheet, ensuring they touch slightly for soft sides.

Serving

  • Bake for 12-15 minutes or until golden brown.
  • Allow to cool slightly on a wire rack.
  • Serve warm with butter, jam, or toppings of your choice.
