Toasted Pecans

Preparation

  • In a mixing bowl, whisk together heavy cream, whole milk, light brown sugar, white granulated sugar, egg yolks, vanilla extract, almond extract, salt, and cinnamon until well combined.

Cooking

  • In a skillet, melt butter over medium heat and add chopped pecans, sugar, and salt. Stir until pecans are golden and fragrant.

Churning and Serving

  • Pour the custard mixture into the ice cream maker and churn according to the manufacturer's instructions. In the last few minutes, add the toasted pecans. Once churned, transfer to a container and freeze until firm before serving.

Notes
