For the Butter Pecans

Preparation

  • Whisk together the heavy cream, whole milk, light brown sugar, white granulated sugar, egg yolks, vanilla extract, almond extract (if using), salt, and cinnamon (if using) in a mixing bowl until well combined.

Cooking

  • In a skillet, melt the butter over medium heat and add the chopped pecans. Toast until the pecans are golden brown and fragrant, stirring frequently to avoid burning.

Churning & Serving

  • Pour the custard mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  • Mix in the toasted pecans during the last few minutes of churning. Transfer the ice cream to an airtight container and freeze until firm.
