Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the ground chicken, minced green onions, minced garlic, minced celery, eggs, kosher salt, and black pepper.
  • Add the plain breadcrumbs, incorporating them well into the mixture.
  • Use your hands to form the mixture into uniform meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  • Brush the tops lightly with canola oil.

Cooking

  • Place the baking sheet in the oven and bake for 20-25 minutes, or until the meatballs are cooked through and golden brown.
  • While the meatballs are baking, heat the Frank's RedHot Wings Buffalo Sauce in a saucepan over low heat.
  • Once the meatballs are done, remove them from the oven and toss them in the heated Buffalo sauce until well coated.

Serving

  • Slice the bolillo rolls or hoagie rolls open for filling.
  • Fill each roll generously with the Buffalo chicken meatballs.
  • Drizzle with blue cheese dressing and sprinkle crumbled blue cheese on top.
  • Garnish with additional green onions if desired and serve immediately while warm.

Notes
