Preparation

  • Heat a large frying pan or cast iron skillet to medium-high heat and add olive oil. Sauté diced peppers and onions for 4-6 minutes until the onions are translucent.
  • Incorporate diced zucchini into the pan and cook for an additional 3-4 minutes. Season with salt and pepper.

Combining Ingredients

  • In a covered pot, add chopped chicken, cream cheese, sautéed vegetables, up to 1 cup of buffalo sauce, shredded cheese, Greek yogurt, and ranch dressing mix.

Cooking

  • Cover and cook on the stove top at medium-low heat for about 15 minutes while stirring at the 10-15 minute mark until well combined and heated through.

Finishing Touches

  • Sprinkle with blue cheese crumbles and finely chopped green onions for garnish.
  • Pair with pita chips, crackers, carrot sticks, celery sticks, cucumber slices, or mini sweet sliced peppers.

Serving

  • If preparing in advance, do not add blue cheese and onions until serving. Reheat in the oven at 350°F for 15 minutes or on the stove top.

Notes

For a creamier dip, let the cream cheese soften at room temperature before mixing. Choose high-quality buffalo sauce tailored to your preferred spice level. Store leftovers in an airtight container and reheat gently to maintain texture.
