  • 8 oz Pasta Any shape works, rotini or penne recommended.

Vegetables

  • 1 cup Cherry tomatoes Halved for sweetness.
  • 1 cup Cucumber Diced for crisp texture.
  • 1/4 cup Red onion Finely chopped for mild sweetness.

Creamy Elements

  • 1 cup Fresh mozzarella balls Adds creaminess.

Herbs

  • 1/2 cup Fresh basil Chopped, adds aromatic flavor.
  • 1/4 cup Fresh parsley Chopped, adds brightness.

Dressing

  • 3 tbsp Extra virgin olive oil Heart-healthy fats.
  • 2 tbsp Balsamic vinegar Adds tanginess.
  • 2 cloves Garlic Minced for depth of flavor.
  • to taste Salt and pepper Enhances all flavors.

Instructions
 

Preparation

  • Cook pasta according to package instructions until al dente (8-10 minutes).
  • Rinse cooked pasta under cold water to cool.
  • Prepare vegetables: halve cherry tomatoes, dice cucumber, and chop red onion.

Assemble

  • In a large bowl, combine cooled pasta, cherry tomatoes, cucumber, red onion, and mozzarella.
  • In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  • Drizzle dressing over the pasta salad and toss gently.
  • Fold in fresh basil and parsley.

Serve

  • Chill salad in the refrigerator for at least 15 minutes.
  • Serve in bowls, garnished with extra herbs if desired.

Notes

For added crunch, incorporate diced bell peppers. Store leftovers in an airtight container for up to 3 days.
