Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • While the oven warms, rinse the chicken breasts under cold water and pat them dry with paper towels.
  • Prepare the bruschetta mixture by dicing the cherry tomatoes and chopping the fresh basil.
  • In a mixing bowl, combine tomatoes, basil, balsamic vinegar, salt, and olive oil. Stir well.
  • Shred your mozzarella cheese and set it aside.

Cooking/Assembling

  • In a large oven-safe skillet, heat a splash of olive oil over medium-high heat.
  • Season each chicken breast with salt and pepper, then place them in the hot skillet.
  • Sear the chicken for about 5-6 minutes on each side until golden brown and cooked through.
  • Once cooked, spoon the bruschetta mixture over each chicken breast and top with shredded mozzarella.
  • Transfer the skillet to the oven and bake for an additional 10 minutes, or until the mozzarella is melted and bubbly.

Serving

  • Remove the skillet from the oven and let it cool for a few minutes.
  • Garnish with additional fresh basil if desired.
  • Serve warm alongside whole grain rice, quinoa, or a light salad for a complete meal.

Notes

This dish can be made gluten-free and dairy-free by swapping ingredients as needed. Perfect for meal prep, can be stored for up to 3 days in the fridge.
