Instructions
 

Preparation

  • Rinse the broccoli and cauliflower florets under cold water and let them drain.
  • Cut the cherry tomatoes in half and dice the red onion.
  • Crumble the cooked bacon and set aside.
  • In a small bowl, combine the mayonnaise, apple cider vinegar, and honey. Whisk until smooth.

Assembly

  • In a large bowl, combine the drained broccoli, cauliflower, halved cherry tomatoes, diced red onion, crumbled bacon, and shredded cheese.
  • Pour the dressing over the vegetable mixture and toss gently until coated.
  • Season with salt and pepper to taste.

Serving

  • Transfer the salad to a serving platter or keep it in the mixing bowl.
  • Chill for about 30 minutes in the fridge before serving.

Notes

For a lighter option, substitute Greek yogurt for mayonnaise. This salad is also perfect for meal prep and can be made a day ahead.
