Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large pot, boil water and cook the long-grain white rice until al dente according to package instructions. Drain and set aside.
  • Cut the broccoli into bite-sized pieces and steam until bright green and tender, about 5 minutes.
  • Dice the yellow onion and mince the garlic.

Cooking/Assembling

  • In a large saucepan, melt the butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the flour, whisking continuously for about 2 minutes until golden.
  • Gradually pour in the whole milk and chicken broth while whisking to avoid lumps. Cook until the mixture thickens, about 5-7 minutes.
  • Season with sea salt, black pepper, thyme, and paprika. Mix in cream cheese until melted and smooth.
  • Combine cooked rice, steamed broccoli, and shredded mozzarella cheese into the sauce, stirring until everything is well coated.
  • Transfer the combined mixture to a greased casserole dish. Top with grated Parmesan and sharp cheddar cheese.
  • Bake uncovered in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.

Serving

  • Remove the casserole from the oven and let it sit for 5-10 minutes for easier serving.
  • Garnish with fresh herbs if desired for added color and freshness.

Notes

For a lighter version, substitute half of the cheese with Greek yogurt. Prepare the casserole in advance and refrigerate it without baking. For added protein, consider mixing in shredded, cooked chicken or turkey.
