Brioche and Toppings

  • 1 loaf brioche bread Cut into slices diagonally.
  • 2 tbsp turbinado sugar Creates a crunchy topping.
  • powdered sugar for dusting Adds a touch of sweetness before serving.
  • 1 cup fresh berries Optional, enhances flavors and presentation.

Instructions
 

Preparation

  • Butter a 12 x 9 baking dish.
  • Cut brioche bread into slices diagonally.
  • In a large mixing bowl, whisk together eggs, brown sugar, maple syrup, heavy cream, whole milk, vanilla extract, cinnamon, nutmeg, melted butter, and salt until well combined.
  • Dip each slice of brioche into the custard mixture and tightly layer them in the baking dish.
  • Pour any remaining custard over the bread, cover tightly, and refrigerate for at least 2 hours or overnight.

Cooking

  • Preheat the oven to 350°F.
  • Remove casserole from the fridge and dot with diced cold butter, then sprinkle with turbinado sugar.
  • Bake for 40-45 minutes until the custard is set and the top is golden brown.

Serving

  • Serve warm topped with powdered sugar, fresh berries, and maple syrup.

Notes

Let the casserole sit for a few minutes after baking to set. Use day-old brioche for better texture. Keep an eye on the baking process; cover with foil if the top browns too quickly.
