Preparation

  • Gather all ingredients on your counter for easy access.
  • In a large skillet over medium heat, crumble the cooked sausage and sauté until warmed through, about 2-3 minutes.
  • In a separate bowl, beat together the eggs. Add them to the skillet with the sausage, stirring occasionally until the eggs are scrambled and fully cooked, about 3–4 minutes.
  • Remove skillet from the heat, then fold in the shredded cheese and thawed hash browns. Season with salt and pepper.

Cooking and Assembly

  • Heat oil in a deep frying pan or air fryer to 375°F (190°C).
  • Lay an egg roll wrapper on a flat surface. Spoon about 2-3 tablespoons of the egg mixture onto the center.
  • Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly to seal. Repeat with remaining wrappers and filling.
  • Fry each egg roll in the hot oil for about 3-4 minutes per side or until golden brown. If using an air fryer, cook at 375°F (190°C) for 10 minutes, flipping halfway.

Serving

  • Once perfectly fried, remove the egg rolls from the oil and place them on paper towels to drain excess oil.
  • Serve the egg rolls warm with your favorite sauces, such as salsa or a spicy aioli.

Notes

Make sure the oil is hot enough to ensure that the egg rolls get crispy. Store leftover filling in airtight containers for quick sandwich options. Uncooked egg rolls can be frozen for a quick meal. Experiment with seasoning for extra flavor.
