  • 1/2 cup Whole milk Contributes creaminess to the mash.
  • 4 tbsp Butter Adds a luscious mouthfeel and enriches flavor.
  • 1 tsp Salt Essential for enhancing all the flavors.
  • 1/2 tsp Black pepper Essential for enhancing all the flavors.
  • 1/4 cup Fresh chives Adds a fresh touch and color to your dish.

Preparation

  • Peel and quarter the potatoes to ensure even cooking.
  • Rinse the potato pieces under cold water to remove excess starch.
  • In a large pot, add the potatoes and cover with chicken stock by about an inch.
  • Season the water with salt and bring to a boil over medium-high heat.
  • Reduce to a simmer for about 15–20 minutes until fork-tender.

Cooking/Assembling

  • Once the potatoes are tender, drain them carefully and return to the pot.
  • Add the Boursin cheese, milk, and diced butter into the warm potatoes.
  • Mash the mixture until smooth and creamy, being careful not to overwork.
  • Season with salt and black pepper to taste.

Serving

  • Transfer mashed potatoes to a serving bowl, creating a slight well in the center.
  • Drizzle melted butter into the well and garnish with fresh chives.
  • Serve immediately, or transfer to a meal prep container if making ahead.

Notes

Use a potato ricer for fluffiest mashed potatoes. Store leftovers in an airtight container for up to 3 days. Can freeze for up to 2 months.
