For the clusters

  • 1 cup Greek yogurt Creamy coating that adds protein and tanginess.

  • 1-2 tablespoons Honey (optional) Adds extra sweetness to the yogurt coating if desired.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine rolled oats, shredded coconut, honey or maple syrup, melted coconut oil, vanilla extract, and salt.
  • Mix until all ingredients are well-coated and combined.
  • Let the mixture sit for about 10 minutes, allowing it to firm up slightly.

Cooking

  • Spread the oat mixture evenly on the prepared baking sheet.
  • Bake in the preheated oven for 15-20 minutes, stirring halfway through until golden brown.
  • Remove from the oven and let the mixture cool completely.
  • While cooling, prepare the Greek yogurt coating by combining yogurt, fresh blueberries, and honey in a bowl.

Assembly

  • Once the oat mixture is cool, break it into clusters.
  • Dip each cluster into the Greek yogurt mixture until well-coated.
  • Place the yogurt-coated clusters back onto the parchment-lined baking sheet.
  • Freeze for about 30 minutes to set the yogurt coating.
  • Once set, serve immediately or store for later enjoyment!

Notes

For a crunchier texture, bake the clusters a little longer, but watch closely to avoid burning. Store clusters in an airtight container to keep them crispy longer.
