For the Burger

Instructions
 

Preparation

  • Drain and rinse the black beans.
  • In a large bowl, mash the black beans until chunky.
  • Chop the onion, garlic, and jalapeños.
  • Preheat your oven to 400°F (200°C) or set your air fryer to the same temperature.

Cooking

  • Heat olive oil in a skillet over medium heat. Add the onion, garlic, and jalapeños; sauté for 3-4 minutes until softened.
  • Stir in the tomato paste, cumin, chipotle powder, and balsamic vinegar. Cook for another 1-2 minutes until fragrant.
  • Combine this mixture with the mashed black beans, egg, feta cheese, breadcrumbs, salt, and pepper. Mix until well blended.
  • Form the mixture into about four burger patties, each about 1 inch thick.
  • Place the patties on a baking sheet or in the air fryer basket.

Baking

  • Bake in the preheated oven for 25-30 minutes, flipping halfway through.
  • If using an air fryer, cook for 15-18 minutes, flipping halfway.
  • Once golden brown and crispy, remove from heat.
  • Serve on your favorite burger buns with toppings.

Notes

For an extra kick, add diced red pepper or corn. Store leftovers in an airtight container in the fridge for up to three days. These burgers can be frozen uncooked for up to three months.
