  • 2 tablespoons cornmeal Sprinkled to create a crispy texture on the bottom of the pizza.

Birria Filling

  • 1 cup Birria Stew The flavorful broth that infuses each pizza with deep, savory notes.
  • 1 cup Vegan mozzarella Meltable and creamy, adding a comforting texture.
  • 1 cup Birria "meat" Plant-based protein mimicking traditional textures.
  • 1 medium yellow onion Provides sweetness and savory flavor; caramelized.
  • 1 cup vegan Mexican blend cheese A combination of flavors that enhances the toppings.
  • 1-2 tablespoons pickled jalapeños Adds a zingy, spicy kick; adjust to taste.
  • 1 tablespoon olive oil For caramelizing the onions.
  • 1 handful fresh cilantro Garnish for freshness and flavor.
  • ½ cup Extra Birria stew Used for drizzling on top.

Instructions
 

Preparation

  • Preheat the oven to 500°F (260°C) and place a pizza stone or heavy-duty baking sheet on the bottom rack.
  • In a heavy-bottomed skillet, heat olive oil over medium heat, add sliced onions, sprinkle with salt, and cook until caramelized, stirring occasionally.

Assembly

  • Divide the pizza dough into 4 equal portions and roll each out to about 5-inch circles on a lightly floured surface.
  • Spread a portion of the Birria stew over each pizza, leaving a half-inch border.
  • Layer with vegan mozzarella, Birria "meat", caramelized onions, pickled jalapeños, and vegan Mexican blend cheese evenly.

Baking

  • Sprinkle a couple of tablespoons of cornmeal on the hot pizza stone or baking sheet.
  • Transfer two assembled pizzas onto the stone or baking sheet; bake for 10-15 minutes until the crust is puffy and vegan cheese is melted.

Serving

  • Serve warm, garnished with chopped fresh cilantro and a drizzle of extra Birria stew.

Notes

For perfect results, use a pizza stone for a crispy crust and allow the onions to caramelize low and slow. Customize toppings according to your preferences.
