Instructions
 

Preparation

  • Wash the broccoli florets thoroughly under cold water.
  • Cut the florets into bite-sized pieces.
  • Dice the red onion and bell pepper finely.
  • Halve the cherry tomatoes and slice the olives.
  • If using cheese, shred it and set aside.

Cooking/Assembling

  • Bring a large pot of salted water to a boil over medium-high heat.
  • Add the pasta and cook according to package instructions until al dente (about 8-10 minutes).
  • In the last 2 minutes of cooking, add the broccoli florets.
  • Once cooked, drain the pasta and broccoli, then rinse under cold water.
  • In a large mixing bowl, combine the cooled pasta and broccoli with the diced onion, bell pepper, halved cherry tomatoes, and sliced olives.

Serving

  • In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  • Pour the dressing over the pasta salad mixture and gently toss to coat.
  • If desired, add the shredded cheese and mix until evenly distributed.
  • Serve immediately or refrigerate for 30 minutes to enhance the flavors.
