Instructions
 

Preparation

  • In a large nonstick skillet, add the onions, mushrooms, and bell peppers, sautéing over medium-high heat until the vegetables are soft, about 7 minutes.
  • Add the ground beef to the skillet, breaking it apart as it cooks until it is browned.
  • Stir in the canned fire-roasted tomatoes (do not drain), taco seasoning, cumin, salt, pepper, optional red pepper flakes, and water to the beef mixture.
  • Allow the mixture to simmer uncovered over medium heat for about 3-4 minutes, or until it thickens slightly.
  • Stir in the lime juice and cilantro, adjusting seasoning as needed, then serve as desired.

Notes

Finely chop your vegetables for an even cook and better texture. Use a nonstick skillet to prevent sticking. Consider using beef broth for a richer flavor. Adjust seasoning during the cooking process and let the mixture sit for a couple of minutes after cooking to meld the flavors.
