Ingredients
  

For the filling

  • 1 lb Ground beef Rich in protein, filling and satisfying.
  • 1 medium Onion, chopped Adds depth and sweetness.

For assembly

  • 2 cups Enchilada sauce Brings the spicy, tangy flavor.
  • 6 large Flour tortillas Perfect base to wrap around fillings.
  • 2 cups Shredded cheese Melts beautifully.
  • 1/4 cup Cilantro, chopped (optional) Fresh touch for garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Heat a large skillet over medium heat and add the ground beef. Cook until browned, about 5-7 minutes.
  • Add chopped onion and minced garlic. Sauté for another 3-5 minutes until the onion is translucent.
  • Stir in the ground cumin, chili powder, and season with salt and pepper. Cook for an additional 1-2 minutes to meld the flavors.

Cooking

  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • On a flour tortilla, spoon a generous amount of the beef mixture, followed by black beans and a sprinkle of cheese.
  • Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat with remaining tortillas.
  • Pour the remaining enchilada sauce over the top, ensuring each roll is coated.
  • Sprinkle the rest of the cheese over the sauce.
  • Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.

Serving

  • Remove from the oven and let cool for about 5 minutes.
  • Garnish with fresh cilantro, if desired, and serve hot.

Notes

For best results, sear the beef before cooking with spices. Use low-sodium enchilada sauce for healthier choices. Store in airtight containers for easy meal prep and transport. Warm tortillas before filling to prevent tearing.
