Ingredients

For Assembly

  • 1 cup Red Enchilada Sauce The sauce that wraps around the enchiladas.
  • 8 pieces Corn Tortillas Holds everything together for an authentic feel.
  • 2 cups Mexican Cheese Blend Melts beautifully and adds creaminess to the dish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula.
  • Once the beef is browned, add the diced onion and sauté until soft, about 3-4 minutes.
  • Stir in minced garlic and cook for another minute.
  • Mix in taco seasoning, tomato paste, and green chiles. Remove from heat.

Cooking & Assembling

  • Pour a thin layer of enchilada sauce on the bottom of a baking dish.
  • Warm the corn tortillas in a dry skillet or microwave to make them pliable.
  • Spoon a portion of the beef mixture onto each tortilla, sprinkle with cheese, and roll them up tightly.
  • Place the filled tortillas seam-side down in the baking dish.
  • Once all are assembled, pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.

Serving

  • Bake the enchiladas in your preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
  • Remove from the oven and let cool for a few minutes before serving.
  • Top with your favorite garnishes like sour cream, avocado, cilantro, or pico de gallo.

Notes

Use fresh ingredients for better flavor. Assemble enchiladas a day in advance and bake when ready, or freeze for later use.
