For the Dough

  • 1/2 cup butter Enriches the dough.
  • 3-4 cups all-purpose flour The base for the dough.
  • 1 cup boiling water Helps activate the dough.
  • 1 large egg For egg wash.

For Serving

  • 1 slice lemon To serve for extra zing.

Instructions
 

Preparation of the Filling

  • Heat olive oil and sauté the diced yellow onion until soft.
  • Add green onion and cook for an additional 2 minutes.
  • Add garlic and ground beef, and cook until beef is browned.
  • Stir in salt, cumin, and paprika to season the filling.
  • Allow the mixture to cool, then mix in chopped hard-boiled egg and olives.
  • Refrigerate the filling for at least 1 hour.

Preparation of the Dough

  • Combine boiling water and butter in a bowl, then add salt.
  • Gradually mix in flour until a dough forms.
  • Knead briefly, then let rest for 30 minutes.
  • Divide dough into 20 balls and let rest again for 20 minutes.

Assembly and Baking

  • Preheat your oven to 400°F (200°C).
  • Roll out each ball into a disk, add filling, fold, and seal edges.
  • Brush with egg wash, then bake for 20-25 minutes until golden.
  • Serve hot or at room temperature with a slice of lemon.

Notes

For best results, allow the filling to cool completely. Adjust the filling ingredients based on personal preference.
