Instructions
 

Preparation

  • Gather all your ingredients and chop your veggies.
  • Dice the onion, carrots, and celery into bite-sized pieces.
  • Mince the garlic and set it aside.

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  • Toss in the minced garlic and cook for an additional minute, stirring constantly.
  • Next, add the ground beef, salt, pepper, and Italian seasoning. Cook until the beef is browned, breaking it apart as it cooks.
  • Stir in the diced tomatoes and tomato sauce, along with the beef broth and water. Bring the soup to a gentle boil.
  • Once boiling, add the elbow macaroni and frozen corn (if using). Reduce heat and simmer until the pasta is cooked, about 8-10 minutes.

Use Lean Ground Beef for a healthier option or substitute with turkey or chicken. Avoid overcooking the pasta to maintain a hearty texture. For a creamier soup, puree some of it and stir it back in.
