Ingredients
  

For the Chicken Skewers

  • 1 lb Boneless, skinless chicken breasts Lean protein foundation
  • 1/2 cup BBQ sauce For smoky flavor
  • 2 tbsp Olive oil For marinating chicken
  • 1 tsp Garlic powder Can substitute fresh garlic
  • 1 tsp Smoked paprika Regular paprika can work too
  • 1 tsp Salt Essential for flavor enhancement
  • 1/2 tsp Black pepper

For the Salad

  • 4 cups Mixed greens (spinach, arugula, romaine) Provides fresh, crunchy base
  • 1 cup Cherry tomatoes Juicy and naturally sweet
  • 1 cup Cucumber Adds refreshing crunch
  • 1 medium Bell pepper Any color adds sweetness and color
  • 1/2 medium Red onion Slight sharpness balances the salad
  • 1 medium Avocado Creamy texture and healthy fats

For the Dressing

  • 2 tbsp Olive oil For a rich base
  • 1 tbsp Apple cider vinegar Adds necessary acidity
  • 1 tbsp Honey Rounds out the dressing with sweetness
  • 1 tsp Dijon mustard For a tangy kick
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions
 

Preparation

  • Soak wooden skewers in water for 30 minutes.
  • Cut chicken breasts into bite-sized pieces.
  • In a bowl, combine BBQ sauce, olive oil, garlic powder, smoked paprika, salt, and pepper.
  • Add chicken pieces to the marinade and let soak for at least 15 minutes or up to 1 hour in the fridge.

Cooking

  • Preheat your outdoor grill or air fryer to 400°F (200°C).
  • Thread marinated chicken onto the skewers, leaving space between pieces.
  • Cook skewers on the grill for about 10-12 minutes or in the air fryer for about 8-10 minutes, turning occasionally until cooked through.
  • While chicken cooks, prepare veggies: dice cucumbers, slice bell peppers and red onion, halve cherry tomatoes, and prepare mixed greens in a large bowl.

Assembly

  • Let skewers rest for a few minutes before removing chicken.
  • Whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper; pour over mixed greens and veggies.
  • Top salad with grilled chicken pieces and sliced avocado.
  • Toss gently to combine; serve immediately.

Notes

Perfect for meal prep and can be customized with various veggies and dressings. Store leftover salad components separately to maintain freshness.
