For the Corn

Instructions
 

Preparation

  • Gather all your ingredients on a clean surface.
  • Rinse the corn and husk it carefully to remove all silk and husks.
  • Chop your onion finely.
  • Shred the cabbage and carrots using a grater or food processor.

Cooking/Assembling

  • In a large bowl, combine the shredded cabbage and carrots.
  • Add mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Stir until well-coated.
  • In a separate pot, combine baked beans, chopped onion, brown sugar, BBQ sauce, and mustard. Heat on medium while stirring for 10-15 minutes.
  • In another pot, bring water to a boil, add corn, and cook for about 5-7 minutes until tender.

Serving

  • Drain corn and serve hot with a pat of butter and sprinkle of salt on top.
  • Plate the creamy coleslaw alongside the baked beans.
