  • 1/2 cup BBQ sauce Choose your favorite brand or homemade.
  • 4 cups mixed greens Fresh and crispy.
  • 1 cup cherry tomatoes Halved for ease of mixing.
  • 1 cup corn kernels Fresh or canned, drained.
  • 1 can black beans Rinsed and drained.
  • 1/2 cup red onion Thinly sliced.
  • 1 cup shredded cheese Cheddar or Monterey Jack, optional.
  • 1 medium avocado Sliced just before serving.
  • to taste salt and pepper For seasoning.
  • 1 cup croutons Optional for extra crunch.

Instructions
 

Preparation

  • Gather all your ingredients on the counter for easy access.
  • Shred the cooked chicken and place it in a large mixing bowl.
  • Halve the cherry tomatoes and slice the red onion thinly.
  • Rinse the black beans under cold water and drain well.
  • Slice the avocado just before serving to prevent browning.

Cooking/Assembly

  • In the bowl with shredded chicken, pour in the BBQ sauce and mix until evenly coated.
  • In a large bowl, layer the mixed greens as the base.
  • Add the corn kernels, black beans, cherry tomatoes, and red onion on top of the greens.
  • Top the salad with the BBQ chicken mixture.
  • Sprinkle shredded cheese over the salad, and add avocado slices.
  • Season with salt and pepper, and toss gently until combined.

Serving

  • Divide the salad into bowls or serve family-style on a large platter.
  • Garnish with croutons if desired, for extra crunch.
  • Serve immediately for the freshest flavors and textures.

Notes
