For the coleslaw

  • 2 cups coleslaw mix Look for pre-cut for convenience.
  • 1/4 cup mayonnaise A creamy base; Greek yogurt can be a substitute.
  • 1 tablespoon apple cider vinegar Balances flavors.
  • 1 tablespoon sugar Adjust or omit based on sweetness preference.
  • to taste Salt and pepper Enhances flavor.
  • 1/4 cup chopped fresh cilantro Optional; adds freshness.
  • 1/4 cup sliced green onions Optional; great garnish.

Instructions
 

Preparation

  • Shred your cooked chicken and place it in a mixing bowl.
  • Add BBQ sauce to the chicken and stir until well-coated.
  • In another bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, and sugar. Mix until combined.

Assembly

  • Lay out your tortillas on a clean surface.
  • Spoon the BBQ chicken mixture onto each tortilla, spreading it out in the middle.
  • Top the chicken with the prepared coleslaw mix and some chopped cilantro or green onions if using.

Serving

  • Roll each tortilla up tightly, tucking in the ends as you go.
  • Slice in half and serve with extra BBQ sauce for dipping. Enjoy them warm or cold!
