Preparation

  • Gather all ingredients and tools. You’ll need a skillet, spatula, and cutting board.
  • Slice the BBQ brisket into manageable pieces for even distribution of flavor.
  • Shred or slice your cheese (Monterey Jack or cheddar are excellent choices).
  • If using onions, slice thinly for incorporation into your melts.
  • Preheat your skillet over medium heat.

Cooking and Assembling

  • Spread butter on one side of each slice of bread.
  • Place one slice of bread, butter-side-down, in the heated skillet.
  • Layer on the BBQ brisket, followed by a generous amount of cheese. Add onions or pickles if desired.
  • Top with another slice of bread, butter-side-up.
  • Cook for about 3-4 minutes until the bread is golden brown, pressing down gently with a spatula.
  • Flip the sandwich and cook for another 3-4 minutes until the cheese is melted and the other side is golden.
  • Remove from heat and let sit for a minute before slicing in half.

Notes
