Preparation

  • Preheat your oven to 225°F (107°C).
  • Rinse the beef brisket under cold water and pat it dry with paper towels.
  • In a small bowl, combine salt, black pepper, garlic powder, onion powder, and paprika to create your dry rub.
  • Generously rub the seasoning mix all over the brisket, ensuring every inch is covered.
  • If using, prepare your smoker with wood chips according to the manufacturer's instructions.

Cooking

  • Place the seasoned brisket in a roasting pan or smoker, fat side up.
  • Insert the meat thermometer into the thickest part of the brisket, ensuring it doesn’t touch the bone.
  • Cook the brisket for approximately 10-12 hours, or until it reaches an internal temperature of 195°F (90°C). Check occasionally if using the oven to ensure it remains moist.
  • During the last hour, brush on a layer of BBQ sauce to create a delicious glaze.

Serving

  • Once cooked, remove the brisket from heat and let it rest for at least 30 minutes.
  • Slice the brisket against the grain for maximum tenderness and serve it warm. Drizzle any remaining BBQ sauce on top.

Notes
