  • Pat the roast dry with paper towels.
  • Mix the salt, pepper, garlic, rosemary, and thyme in a small bowl.

Cooking

  • Place the roast in a roasting pan and pop it in the oven.
  • Roast for 15 minutes at high heat.
  • Lower the temperature to 325°F (163°C) and continue roasting for about 90 to 120 minutes.
  • Use a meat thermometer to check for doneness—135°F (57°C) for medium-rare.
