Preparation

  • Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or grease them well.
  • Mash the bananas in a large bowl until they are smooth and creamy.
  • Melt the butter in a small bowl and let it cool slightly before adding it to the banana mixture.
  • Add the sugar, egg, and vanilla to the banana-butter mix, stirring until everything is combined.

Cooking

  • Mix in the baking soda and salt, ensuring it’s well incorporated.
  • Sift the flour into the bowl and fold it gently until just combined (don’t overmix!).
  • Stir in the chocolate chips.
  • Scoop the batter into the muffin tin, filling each liner about two-thirds full.

Baking

  • Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for about 5 minutes, then transfer to a wire rack to cool further.

Notes

Store in an airtight container at room temperature for about 3 days. They freeze beautifully for up to 3 months. Reheat in a 350°F oven for 5-10 minutes or microwave for 20 seconds.
