  • 1 large Egg Binds ingredients together

Dry Ingredients

  • 1 1/2 cups Flour All-purpose flour

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with paper liners or grease it with cooking spray.
  • In a mixing bowl, mash the bananas until smooth.
  • Add vegetable oil, honey or maple syrup, vanilla extract, and egg to the mashed bananas. Mix well.
  • In another bowl, combine flour, baking soda, and salt.

Cooking

  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the chocolate chips and coconut flakes gently.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, remove from the oven and allow muffins to cool in the pan for a few minutes.

Serving

  • Transfer muffins to a wire rack to cool completely.
  • Enjoy them warm or at room temperature.
  • Store any leftovers in an airtight container at room temperature for up to three days.

For best results, ensure bananas are very ripe. Don’t overmix the batter, and consider toasting the coconut flakes beforehand. Store muffins in an airtight container and reheat if desired.
