Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, mash 2 ripe bananas until smooth.
  • Add in 1/2 cup sugar, 1/4 cup melted butter, 1 egg, and 1 teaspoon of vanilla extract. Mix until fully combined.
  • In another bowl, whisk together 1 cup of flour, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, and 1/4 teaspoon of salt.
  • Gradually add the dry ingredients to the banana mixture until just combined.

Cooking/Assembling

  • In a small bowl, mix together 1/2 cup brown sugar and 1 teaspoon of cinnamon to create the filling.
  • On a lightly floured surface, roll out the dough into a rectangle about 1/2-inch thick.
  • Spread the filling mixture evenly over the dough, leaving a small border around the edges.
  • If desired, sprinkle on 1/2 cup chopped walnuts for extra texture.
  • Starting from one edge, roll the dough tightly into a log. Pinch the seams to seal.
  • Cut the log into 1-inch thick rolls and place them in a greased baking dish.
  • Bake in the preheated oven for 25-30 minutes until golden brown.

Serving

  • Remove the rolls from the oven and let them cool for a few minutes.
  • Drizzle with your favorite icing if you like for added sweetness.
  • Serve warm and enjoy with a cup of your favorite coffee or tea!

Notes

For the best results, use overripe bananas for a more intense flavor. Adjust the cinnamon to your taste for a spicier profile. Store leftovers in an airtight container to keep them moist. You can also make the dough the night before and refrigerate it for quicker preparation in the morning.
