Preparation

  • Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Incorporate the peanut butter, honey, eggs, and vanilla extract, mixing until combined.
  • Add the oats and mix until everything is well blended.

Cooking

  • Pour the banana mixture into the prepared baking dish, spreading it evenly.
  • Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow to cool completely in the baking dish.

Serving

  • Once cooled, cut the banana bars into squares.
  • Serve plain or with a drizzle of additional honey and slices of banana on top for added flavor.
