  • 20 oz fresh cheese tortellini Serves as the main component.
  • 2 cups shredded mozzarella cheese Melts beautifully, adding creaminess.
  • 1/4 cup parmesan cheese Provides a nutty, salty kick.
  • to taste salt and pepper Enhances the flavors of the other ingredients.

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • Drizzle olive oil into a large oven-safe skillet and heat over medium-high.
  • Add the Italian sausage and break it apart, cooking until browned.
  • Stir in the diced onion, carrots, and minced garlic. Cook until the veggies are tender.

Cooking

  • Once the meat is fully cooked, pour in the marinara sauce and water or broth, then add chopped spinach.
  • Cook until spinach wilts, then season with salt and pepper as necessary.
  • Stir in the fresh tortellini, along with 1.5 cups of shredded mozzarella and 1/4 cup of Parmesan. Mix well.
  • Turn off the heat, spread the mixture evenly in the pan, and top with remaining mozzarella.

Serving

  • Cover the dish with a lid or foil and bake for about 40 minutes until the cheese is melty.
  • If desired, broil uncovered for a minute to brown the cheese, watching carefully.
  • Remove from oven and allow to rest for at least 5 minutes before serving.

Notes

This dish can be made ahead of time and stored in the refrigerator. For variations, consider using turkey sausage or different cheeses.
