  • Warm the corn tortillas for about 20 seconds in the microwave to make them pliable.

Cooking/Assembling

  • Lay out a corn tortilla on a clean surface and scoop about 2-3 tablespoons of the chicken mixture into the center.
  • Tightly roll the tortilla around the filling, placing it seam-side down on a baking sheet lined with parchment paper.
  • Repeat with remaining tortillas and filling, ensuring they are evenly spaced on the baking sheet.
  • Lightly spray the tops of the taquitos with cooking spray or brush them with a small amount of olive oil for extra crispiness.
  • Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.

Serving

  • Remove the taquitos from the oven and allow them to cool slightly for about 5 minutes.
