  • 12 oz pasta Any type of pasta works, cook according to package instructions.
  • 8 oz feta cheese Use block feta for better melting quality.
  • 2 cups cherry tomatoes Sweet and juicy, ideal for roasting.
  • 1/4 cup olive oil Extra virgin is preferred for better flavor.
  • 3 cloves garlic Chopped or minced for best results.
  • to taste salt Essential for flavor enhancement.
  • to taste black pepper Freshly ground is best.
  • 1/4 cup fresh basil Chopped, for garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Chop the garlic and gather your pasta, feta, tomatoes, olive oil, salt, and pepper.
  • Place the feta and tomatoes in a baking dish, drizzle with olive oil, and season with salt and pepper.

Cooking

  • Place the baking dish in the oven and bake for about 25 minutes, until the tomatoes burst and the feta is golden and soft.
  • While the feta and tomatoes are baking, cook the pasta according to package instructions. Drain and set aside.
  • Once everything is out of the oven, mash the feta and tomatoes together with a fork and mix in the cooked pasta until well coated.

Serving

  • Serve the creamy pasta in bowls.
  • Garnish with fresh basil and an extra drizzle of olive oil if desired.
  • Enjoy your delicious, creamy goodness!

Notes

Make a double batch for easy lunches. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Can also be frozen for about a month.
