  • 4 soft taco shells Tender base for the filling.
  • 4 crunchy taco shells Provides a delightful crunch.

Instructions
 

Preparation

  • Preheat a cooking pan over medium heat.
  • Pour vegetable oil into the pan and let it heat up.
  • Add diced onion, jalapeños, and tomatillos to the pan, cooking until softened, about 5-7 minutes.
  • Add ground turkey to the vegetable mixture, breaking it up with a spatula.
  • Sprinkle salt, cumin, and chili powder over the turkey mixture, stirring well to combine all ingredients.
  • Cover the pan to retain heat and cook for a few minutes.
  • Stir the mixture and break up any clumps until the turkey is fully cooked and no longer pink.

Assembly

  • In a separate pan, melt some shredded Mexican cheese on the soft taco shells over medium heat until gooey.
  • Carefully place a crunchy taco shell in the center of the cheese-covered soft taco.
  • Gently press the sides of the soft and crunchy tacos together to seal them.
  • Divide the cooked turkey and vegetable mixture among the prepared taco shells.
  • Top with diced avocado and sprinkle minced cilantro over the toppings.
  • Squeeze fresh lime juice on top.
  • Serve immediately while warm.

Notes

For best results, use ripe avocados and don't rush the cooking process of the vegetables. Customize spice levels based on preference. For a creative twist, try different toppings such as pickled onions or mango salsa.
