Preparation

  • Boil a large pot of salted water and add the corn. Boil for 7-10 minutes until tender.
  • Remove corn from the pot and allow it to cool.
  • Once cool, slice the kernels off the cob and set aside.
  • Chop avocados, red onion, and jalapeƱos into small pieces.

Mixing

  • In a large bowl, combine the diced avocados, onions, jalapeƱos, corn kernels, and cilantro.
  • Sprinkle the ground cumin, chili powder, and salt over the mixture.
  • Squeeze lime juice over the combination and stir gently to mix.

Serving

  • Serve immediately for the best flavor and texture.

Notes

For added sweetness, grill the corn for extra flavor. To prevent browning, add more lime juice to leftovers before sealing.
