  • 1 large Avocado Ripe for the best creamy flavor.
  • 4 large Hard-boiled eggs Cooked perfectly to avoid crumbly texture.
  • 1 tablespoon Dijon mustard Adds tangy flavor.
  • 2 tablespoons Mayonnaise For creaminess.
  • 1 pinch Salt To taste.
  • 1 pinch Pepper To taste.
  • 2 slices Bread Your choice of bread.

Preparation

  • Hard boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Once boiling, cover and remove from heat. Let sit for about 12 minutes.
  • After the eggs have cooled, peel them and chop them into small pieces.
  • In a bowl, mash the avocado until smooth.

Mixing

  • Add the chopped eggs to the bowl with the mashed avocado.
  • Mix in Dijon mustard and mayonnaise until well combined.
  • Season the mixture with salt and pepper to taste.

Serving

  • Spread the avocado egg salad generously on slices of your favorite bread.
  • Top with additional garnishes if desired.
  • Cut the sandwich in half and enjoy immediately or pack in a meal prep container.

Notes

Store the salad separately from the bread to maintain freshness. Add lemon juice to prevent browning of the avocado. Experiment with different breads for variety.
