Preparation

  • Hard boil the egg. Place the egg in a medium pot, cover with cold water, bring to a boil, then cover and remove from heat. Let it sit for 9-12 minutes, then place in ice water to cool. Once cool, peel the egg.
  • Toast your bread. Use a toaster to achieve a nice, golden-brown crunch.
  • In a medium bowl, mash the avocado, cottage cheese, and hard-boiled egg with a fork.
  • Add paprika, salt, black pepper, Dijon mustard, and sliced green onion to the mixture and mix well.
  • Spread the cottage cheese avocado mix on each slice of toast.
  • Sprinkle with everything but the bagel seasoning and hemp seeds, then enjoy!
