Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine lean ground beef, egg, panko bread crumbs, ketchup, garlic powder, onion powder, sea salt, and pepper.
  • Mix thoroughly using your hands or a spoon until just combined; avoid overmixing to maintain tenderness.
  • Roll the mixture into evenly sized meatballs, about 1.5 inches in diameter.

Cooking

  • Place the meatballs on the prepared baking sheet, spacing them evenly.
  • In a separate bowl, whisk together Sriracha, reduced-sodium soy sauce, apple cider vinegar, honey, grated ginger, and minced garlic until smooth.
  • Brush half of the glaze over the meatballs.
  • Bake in the oven for 15–20 minutes, or until the meatballs are cooked through and have reached an internal temperature of 160°F (71°C).
  • Remove from the oven and brush the remaining glaze over the meatballs.

Serving

  • Let meatballs cool slightly before serving; this also helps the glaze to set.
  • Serve over a bed of cooked brown rice, garnishing with sesame seeds and sliced green onions.
